Fermented Veggie Plate

Why it matters:

A homemade plate of mixed ferments gives you a range of beneficial microbes and flavour which is great alongside meals or as a crunchy side. 


Ingredients:

• 1 cup kimchi (store-bought or homemade)

• 1 cup sauerkraut (raw, unpasteurized if possible)

• Fresh additions (optional): shredded carrot, beet ribbons, thin-sliced radish

• Lemon or lime wedge to brighten

Method:

Arrange kimchi and sauerkraut on a plate.

If using extra fresh veg, add around the edges.

Squeeze a little lemon/lime over everything just before eating.

(Ferments can be served cold or room temperature.)
