Chia & Berry Coconut Pudding



Why it matters:

Chia seeds gel into a pudding-like texture once soaked, providing fibre, omega-3s, and gentle prebiotic support while berries offer antioxidants. 

Ingredients (2 servings):

• ½ cup chia seeds

• 2 cups coconut milk (or other milk of choice)

• 1–2 tbsp natural sweetener (maple syrup, honey)

• 1 tsp vanilla extract (optional)

• 1 cup mixed berries (fresh or thawed)

• Optional: pinch cinnamon or turmeric

Method:

In a bowl or jar, mix chia seeds, coconut milk, sweetener and vanilla.

Stir well to avoid clumping.

Refrigerate at least 2 hours or overnight.

Before serving, gently stir to even consistency.

Top with berries and a sprinkle of cinnamon if you like.
